Ingredients

  • 1 ¾ melted butter or coconut oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup natural yogurt
  • 3/4 cup milk of choice – I prefer nut milk
  • 3 scoops of protein powder optional
  • 1/3 cup coconut flour
  • 2/3 cup shredded coconut
  • 1/2 cup chopped mixed nuts optional
  • 2 tsp baking powder
  • Pinch of sea salt
  • 1 Tbsp cinnamon
  • Directions
  • Preheat oven to 350°F
  • Melt butter and whisk together with eggs vanilla, yogurt and milk
  • In a large bowl mix together all other ingredients.
  • Add wet ingredients stir gently until combined.
  • Grease a 8 X 12 baking dish
  • Spoon mixture into tray and evenly spread.
  • Bake for approx. 40 mins until golden and firm to the touch.
  • Cut into slices and store in an airtight container in the fridge
