Coconut and Vanilla Cake

Ingredients
- 1 ¾ melted butter or coconut oil
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup natural yogurt
- 3/4 cup milk of choice – I prefer nut milk
- 3 scoops of protein powder optional
- 1/3 cup coconut flour
- 2/3 cup shredded coconut
- 1/2 cup chopped mixed nuts optional
- 2 tsp baking powder
- Pinch of sea salt
- 1 Tbsp cinnamon
- Directions
- Preheat oven to 350°F
- Melt butter and whisk together with eggs vanilla, yogurt and milk
- In a large bowl mix together all other ingredients.
- Add wet ingredients stir gently until combined.
- Grease a 8 X 12 baking dish
- Spoon mixture into tray and evenly spread.
- Bake for approx. 40 mins until golden and firm to the touch.
- Cut into slices and store in an airtight container in the fridge
