Watercress and Spinach

- 1 Tbsp. olive oil
- 2 cups fresh watercress
- 8 cups fresh spinach
- Salt to taste
Instructions
- In a large sauté pan, heat the olive oil over medium heat. Add the watercress and sauté until tender, about 3 minutes.
- Remove the pan from heat, stir in the spinach to wilt. Season with salt.

Serve with 4 oz. chicken or fish.
