Ingredients

  • 1 Tbsp. olive oil
  • 2 cups fresh watercress
  • 8 cups fresh spinach
  • Salt to taste

Instructions

  • In a large sauté pan, heat the olive oil over medium heat. Add the watercress and sauté until tender, about 3 minutes. 
  • Remove the pan from heat, stir in the spinach to wilt. Season with salt.

Notes

Serve with 4 oz. chicken or fish.
