Taco Cauliflower Casserole

This recipe is very tasty and extremely simple to make. It is low carb for those of us who are watching their carb intake.

Ingredients

  • 1-2 lbs ground beef
  • 1-2 bags riced cauliflower
  • 1 cup chopped onion
  • 1 cup chopped bell peppers colored
  • 1 14 oz can diced tomatoes
  • 1 can black beans drained and rinsed
  • 2 pkgs taco seasoning
  • 1 avocado
  • 1 cup shredded cheese I used mexican blend
  • olive oil
  • garlic
  • green chiles optional
  • salsa optional

Instructions

  • In large fry pan place olive oil with onions and green peppers - saute them until they are cooked through.
  • At same time put bag of cauliflower in microwave for 5 minutes. Add cauliflower to onions and green pepper mix, stir and cook on medium heat for about 10 minutes stirring occasionally. When cooked through place mixture to the side.
  • Place olive oil and tbsp of minced garlic in large fry pan to saute, add ground beef and cook until browned.
  • Drain grease and add can of tomatoes and liquid. Stir until well blended. Add black beans (if use and 1 pkg of taco seasoning.
  • In 8x10 casserole dish place cauliflower and veggie mix. Add in ground beef and tomato blend. Mix it all together.
  • Sprinkle other pkg of taco seasoning over mixture. Sprinkle cheese over casserole and put in preheated 350 degree over for 10-15 minutes - until cheese is melted.
  • Take out of oven and let it cool. Cut up avocado into pieces and place on casserole.
