Cauliflower Lasagna
Delicious, satisfying main dish entree.

Ingredients
- 4 cups cooked Cauliflower grated or shredded in food processor
- 3 ½ cups Low-Fat Mozzarella shredded and divided
- 1 cup Egg Beaters
- 1 ½ cups Low-Fat Cottage Cheese
- 6 tbsp Parmesan Cheese
- 16 oz Lean Ground Turkey (99%) cooked with Italian seasonings
- 3 cups Spaghetti Sauce (Raoʼs Marinara) No Sugar Added
Instructions
- Pre-Heat oven to 350F.
- Spray 9x13” casserole dish with non-stick spray.
- In medium bowl, mix cauliflower, egg beaters, and ½ mozzarella.
- In small bowl, mix the cottage cheese and parmesan cheese.
- Spread ½ sauce in the bottom of the dish.
- Spread ½ the cauliflower mixture over the sauce.
- Spread ½ the cottage cheese mixture over the cauliflower mixture.
- Spread ½ the ground turkey over the cottage cheese mixture.
- Repeat with the remaining ingredients.
- Spread remaining mozzarella cheese over the top.
- Bake for 45-55 minutes.
- Allow to cool for 15 minutes before cutting and serving.
