Ingredients

  • ¼ c almonds toasted and coarsely chopped
  • 1 cup rolled oats
  • 3.5 tbsp rice flour
  • 1 scoop protein powder – optional
  • ¼ c sunflower seeds
  • ¼ c raisins
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ¼ c almond butter
  • ½ c organic maple syrup
  • 1 tsp vanilla extract
  • ½ c apple juice – organic preferred
  • 2 tbsp melted coconut oil

Instructions

  • Preheat oven to 350 degrees
  • Grease a 9x9 baking pan using coconut oil
  • Combine almonds, oats, rice flour, protein powder, sunflower seeds, raisins, cinnamon and salt in medium bowl and stir to combine
  • Whisk the almond butter, maple syrup, vanilla and apple juice together in another bowl
  • Combine wet and dry ingredients together until throughouly mixed
  • Press the mixture evenly into prepared baking pan
  • Bake for 20 minutes

Notes

Bake for 20 minutes Remove the pan from the oven and cut into 16 bars Brush the coconut oil over the top of the bars Return the pan to the oven and back until golden brown –15-20 minutes Cool for 10 minutes in pan, remove from pan, place on cooling rack to finish cooling
