Ingredients

  • 1 cup black beans
  • 1 ripe banana
  • 1- cup old-fashioned oats
  • 1 cup frozen blueberries
  • 1/4- cup raisins
  • 1/8- cup pomegranate juice
  • 2 tbsp. finely chopped dates
  • 1 tbsp. finely chopped walnuts
  • 2 tbsp. finely chopped sunflower seeds
  • 2 tbsp. ground flax seeds

Instructions

  • Preheat oven to 275
  • Chop all nuts in food processor and add black beans, and dates puree together
  • Mash banana in large bowl, add pureed beans and nuts, and remaining ingredients
  • Wipe a square baking pan with olive or coconut oil, spread mixture into the pan. 
  • Bake for 75 minutes. Cool and cut into bars. Refrigerate remaining bars in oven.
