Breakfast Casserole
This recipe is super simple, very flexible, and tastes great.
Servings: 4 people
Ingredients
- 1 Dozen Eggs
- 1/2 cup salsa
- 1 small onion
- 1 bell pepper
- 1 tomato
- 1 cup spinach
Instructions
- Grease baking dish of choice - I use a glass baking dish.
- Chop up veggies into small pieces.
- Beat up 6 eggs and pour into baking dish.
- Add Salsa and chopped veggies
- Beat up rest of eggs and pour over veggies.
- Stir everything together.
- Season to your liking.
- Bake at 400 degrees for about an hour.
Notes
When done the casserole should cut easily and be rather solid.
Cut into squares and transfer to container for storage. These can be reheated for a quick and nutritious breakfast. I add mushrooms and feta cheese at times. Switching up the veggies or adding in some bacon or different kinds of cheese will change the taste every time.
