Ingredients

  • 4 cups cooked Cauliflower grated or shredded in food processor
  • 3 ½ cups Low-Fat Mozzarella shredded and divided
  • 1 cup Egg Beaters
  • 1 ½ cups Low-Fat Cottage Cheese
  • 6 tbsp Parmesan Cheese
  • 16 oz Lean Ground Turkey (99%) cooked with Italian seasonings
  • 3 cups Spaghetti Sauce (Raoʼs Marinara) No Sugar Added

Instructions

  • Pre-Heat oven to 350F.
  • Spray 9x13” casserole dish with non-stick spray.
  • In medium bowl, mix cauliflower, egg beaters, and ½ mozzarella.
  • In small bowl, mix the cottage cheese and parmesan cheese.
  • Spread ½ sauce in the bottom of the dish.
  • Spread ½ the cauliflower mixture over the sauce.
  • Spread ½ the cottage cheese mixture over the cauliflower mixture.
  • Spread ½ the ground turkey over the cottage cheese mixture.
  • Repeat with the remaining ingredients.
  • Spread remaining mozzarella cheese over the top.
  • Bake for 45-55 minutes.
  • Allow to cool for 15 minutes before cutting and serving.
