Chicken Soup

Ingredients
- 1 Whole Chicken or Chicken w/ bones
- 1 pkg of precooked rice or quinoa
- 1-2 potatoes of choice
- 1 pkg of frozen veggies of choice
- celery and carrots if desired
- 1 small onion
- 2 tbsp crushed garlic
- spices as desired
Instructions
- Put chicken in large pot of salted water - cover chicken, cook on high skimming white foam out of water until chicken is cooked - should take 1-2 hours depending on chicken
- While chicken is cooking, place rice, veggies, cut up potato, garlic, in crockpot
- After chicken is cooked remove chicken from broth, and pour broth into crockpot over veggies, leave about 3/4 space from top
- Set chicken aside to cool, when cooled remove chicken from bone and shred or cut into pieces and put in crockpot.
- Turn on heat - high if you need to eat in 2-3 hours, low if you have 5-6 hours.
- Let cool and serve
Notes
When cooking chicken make sure you put enough water in pot to cover chicken. This makes the best soup if chicken has bones, I use a whole chicken for mine. The chicken cooks faster if no bones, but tastes better if you use the chicken with the bones.
