Spaghetti Squash Casserole

Ingredients
- 1 large or 2 small spaghetti squash
- 2 pounds ground beef
- 2 medium tomatoes - optional
- 1 large cottage cheese
- 1 pkg of Italian blend cheese
- 1 pkg parmesan cheese
- 2 large jars of spaghetti sauce of your liking
- basil and oregano for seasoning
- olive oil or coconut oil for greasing of pan
Instructions
- Bake spaghetti squash for 40 minutes at 350 degrees.
- Let sit to the side to cool down, when cool scrape out squash from inside with a spoon or fork and put in large bowl.
- Cut up tomatoes and put on top of squash and mix in -optional.
- Brown ground beef and drain.
- Add spaghetti sauce to beef and stir.
- Take 9x13 pan and grease with olive or coconut oil.
- Add squash and tomato mixture to bottom of pan and cover –only use about half.
- Put about half of the sauce and beef mixture covering the squash.
- Spoon cottage cheese over beef mixture spreading out to cover.
- Spread out Italian blend cheese over cottage cheese.
- Put remaining spaghetti squash over cheese – covering completely.
- Put remaining sauce and beef mixture over the squash –covering completely.
- Cover sauce with parmesan cheese, season to your liking with basil and oregano.
Notes
Bake at 350 degrees for 1 hour, take out of oven and let sit for 30-40 minutes to cool and solidify before cutting and serving.
