Ingredients

  • 1 avocado sliced
  • ½ red bell pepper cut into strips
  • 1 carrot cut into noodles
  • 1 zuchinni cut into noodles
  • 1 yellow squash cut into noodles
  • 8 lettuce leaves
  • 8 rice paper wraps

Instructions

  • Cut and slice all vegetables. Toss the noodles into marinade (see recipe), and line the rice paper with the lettuce leaf, and start rolling. Makes 8 rolls – serve with Peanut Sauce
