Spring Rolls

Ingredients
- 1 avocado sliced
- ½ red bell pepper cut into strips
- 1 carrot cut into noodles
- 1 zuchinni cut into noodles
- 1 yellow squash cut into noodles
- 8 lettuce leaves
- 8 rice paper wraps
Instructions
- Cut and slice all vegetables. Toss the noodles into marinade (see recipe), and line the rice paper with the lettuce leaf, and start rolling. Makes 8 rolls – serve with Peanut Sauce
