Vegetable Quiche
Here is a quick and easy breakfast recipe – you can eat this any time of the day.
Servings: 4
Equipment
- baking dish
Ingredients
- 1 Cup egg beaters or 4 eggs
- ½ cup low moisture part skim mozzarella cheese
- ½ cup tomato – chopped
- ½ cup broccoli – chopped
- ½ cup zucchini – chopped
- 2 wedges laughing cow cheese or other cheese of choice
- ¼ tsp salt
- ¼ tsp pepper
- ¼ tsp onion powder
Instructions
- Preheat oven to 375.
- Spray a baking dish with cooking spray
- Mix all ingredients together in a bowl
- Pour mixture into prepared pan
- Bake 35 minutes
Notes
This recipe is just for one person, but can easily be doubled for two. Also, you can substitute veggies – I have substituted the broccoli and zucchini with mushrooms and spinach a few times.
