Vegetable Quiche

Here is a quick and easy breakfast recipe – you can eat this any time of the day.

Equipment

Ingredients

  • 1 Cup egg beaters or 4 eggs
  • ½ cup low moisture part skim mozzarella cheese
  • ½ cup tomato – chopped
  • ½ cup broccoli – chopped
  • ½ cup zucchini – chopped
  • 2 wedges laughing cow cheese or other cheese of choice
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp onion powder

Instructions

  • Preheat oven to 375.
  • Spray a baking dish with cooking spray
  • Mix all ingredients together in a bowl
  • Pour mixture into prepared pan
  • Bake 35 minutes

Notes

This recipe is just for one person, but can easily be doubled for two. Also, you can substitute veggies – I have substituted the broccoli and zucchini with mushrooms and spinach a few times.
