Ingredients

  • 2 Tbsp. olive oil
  • 2 chicken breasts
  • 2 cloves garlic
  • 1 jalapeño
  • 1 cup quinoa
  • 1 cup vegetable broth
  • 1 15oz can of black beans
  • 1 15oz can fire-roasted diced tomatoes
  • 1 cup corn
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt to taste
  • Pepper to taste
  • 1 avocado
  • juice of 1 lime

Instructions

  • Heat olive oil in a large skilletover medium high heat. Dice chicken breasts and cook thoroughly. Add salt andpepper to taste. Add crushed garlic and a diced jalapeño pepper (leave thejalapeño seeds in for extra spice).
  • Stir in quinoa, vegetable broth, beans, tomatoes, corn,chili powder and cumin; season with salt and pepper to taste. 
  • Cover and simmer until quinoa is cooked through, roughly 30 minutes. Stir in avocado, cilantro,and lime juice. Garnish with extra cilantro and enjoy!
