Ingredients
1/2
pkg quinoa - uncooked
small package of corn or 1 can of corn drained
1
can of diced tomatoes
1
small onion or 1/2 medium onion diced
1
can black beans
1
tbsp
minced garlic
1
pkg vegetable broth
low sodium preferred
Instructions
Put all ingredients into crockpot, stir together and cook on low for 8 hours.
If cooking on top of the stove it will take about 30 - 40 minutes, just make sure the quinoa is done and has absorbed all the liquid.
Notes
Top with cheese if desired before serving.
