Ingredients

  • 1/2 pkg quinoa - uncooked
  • small package of corn or 1 can of corn drained
  • 1 can of diced tomatoes
  • 1 small onion or 1/2 medium onion diced
  • 1 can black beans
  • 1 tbsp minced garlic
  • 1 pkg vegetable broth low sodium preferred

Instructions

  • Put all ingredients into crockpot, stir together and cook on low for 8 hours. 
  • If cooking on top of the stove it will take about 30 - 40 minutes, just make sure the quinoa is done and has absorbed all the liquid.

Notes

Top with cheese if desired before serving.
