Put olive oil in wok or large saucepan and start cookingon medium heat
Add Garlic and onion to olive oil and let sauté
Add chopped veggies to olive oil mixture – stirring whileadding
Add canned tomato’s and stir
Add brown rice and stir
Add black beans and stir
Make sure everything is stirred together well, cover pot and cook on medium heat 20 -30 minutes until rice is soft.
