Ingredients

  • 2 tbsp. coconut or olive oil
  • 2 cups chopped broccoli
  • 2 cups chopped mushrooms
  • 2 cups chopped tomatoes
  • 4 cups spinach chopped
  • 2 cups cooked quinoa
  • Sea salt and pepper to taste

Instructions

  • Heat the coconut or olive oil in a sauté pan over medium heat.
  • Add the veggies and cook about 10 minutes until tender.
  • Add the quinoa, sea salt and pepper to the pan and combine.
  • Cook for another 2-3 minutes or until quinoa is warm.
