Quinoa Veggie Scramble

Ingredients
- 2 tbsp. coconut or olive oil
- 2 cups chopped broccoli
- 2 cups chopped mushrooms
- 2 cups chopped tomatoes
- 4 cups spinach chopped
- 2 cups cooked quinoa
- Sea salt and pepper to taste
Instructions
- Heat the coconut or olive oil in a sauté pan over medium heat.
- Add the veggies and cook about 10 minutes until tender.
- Add the quinoa, sea salt and pepper to the pan and combine.
- Cook for another 2-3 minutes or until quinoa is warm.
