Ingredients

  • 1/4 cup olive oil
  • 1 onion thinly sliced
  • 1 bulb fennel cored and thinly sliced
  • 2 cloves garlic minced
  • 2 1/2 cups chicken stock
  • 1 14.5 oz can diced tomatoes
  • 1/2 tsp sea salt

Instructions

  • In a large skillet over medium high heat, heat the oil. Add the onion, garlic and fennel and cook for 10 minutes until soft.
  • Add the stock, tomatoes with juice and salt. Bring to a boil, reduce the heat to a simmer, cover and cook for 10 minutes.
