Tomato and Fennel Soup

Ingredients
- 1/4 cup olive oil
- 1 onion thinly sliced
- 1 bulb fennel cored and thinly sliced
- 2 cloves garlic minced
- 2 1/2 cups chicken stock
- 1 14.5 oz can diced tomatoes
- 1/2 tsp sea salt
Instructions
- In a large skillet over medium high heat, heat the oil. Add the onion, garlic and fennel and cook for 10 minutes until soft.
- Add the stock, tomatoes with juice and salt. Bring to a boil, reduce the heat to a simmer, cover and cook for 10 minutes.
