Ingredients

  • 1 pkg 100 % buckwheat soba noodles
  • 1 red pepper thinly sliced
  • ½ c celery thinly slices on diagonal
  • 1 c carrots cut into matchsticks
  • ¼ c scallions thinly sliced
  • 1 clove garlic minced
  • 1 tbsp minced fresh ginger
  • 2 tsp toasted sesame oil
  • 1.5 tbsp balsamic vinegar
  • t tsp organic maple syrup
  • 2 tbsp brown rice vinegar
  • ¼ c sesame oil
  • juice of 1 lime
  • ¼ tsp salt
  • ¼ c finely chopped cilantro
  • 1 tbsp toasted sesame seeds

Instructions

  • Bring a large pot of water to boil, add the soba noodles to water and cook for 7-9 minutes stirring occasionally
  • Empty noodles into a colander and run cold water over them to remove the starch
  • Combine the noodles and veggies in a large bowl.
  • Whisk together the garlic, ginger, toasted sesame oil, lime juice, brown rice vinegar, balsamic vinegar and salt to create the dressing.
  • Pour the dressing over the salad and toss. Garnish with cilantro and toasted sesame seeds.
