Almond Blueberry Muffins

- 3 cups almond flour
- ½ tsp baking soda
- ¼ tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground cardamom
- ½ tsp vanilla extract
- ½ tsp raw honey or organic maple syrup
- 3 eggs
- 1 c fresh or frozen blueberries
- 1-2 tbsp chia seeds

Directions
- Preheat oven to 325 degrees
- Line the muffin tin with liners or grease with coconut oil
- Mix the almond flour, baking soda, salt, cinnamon and cardamom in a bowl
- Combine the vanilla honey or syrup and eggs and mix well in a different bowl
- Add wet and dry ingredients together and mix well
- Add the blueberries and mix well
- Divide the batter among the muffin cups
- Sprinkle the chia seeds over the top of each muffin
- Bake the muffins for 20 minutes until the tops of the muffins are light brown and firm
- Cool on rack
