  • 3 cups almond flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground cardamom
  • ½ tsp vanilla extract
  • ½ tsp raw honey or organic maple syrup
  • 3 eggs
  • 1 c fresh or frozen blueberries
  • 1-2 tbsp chia seeds

  • Preheat oven to 325 degrees
  • Line the muffin tin with liners or grease with coconut oil
  • Mix the almond flour, baking soda, salt, cinnamon and cardamom in a bowl
  • Combine the vanilla honey or syrup and eggs and mix well in a different bowl
  • Add wet and dry ingredients together and mix well
  • Add the blueberries and mix well
  • Divide the batter among the muffin cups
  • Sprinkle the chia seeds over the top of each muffin
  • Bake the muffins for 20 minutes until the tops of the muffins are light brown and firm
  • Cool on rack
