Ingredients

  • 1 lb. ground chuck
  • 1 TBSP. Worcestershire sauce
  • 1 Eggplant
  • 1 small onion
  • 1 bell pepper of choice
  • 1 medium zucchini
  • 1 medium yellow squash
  • 1 medium can of stewed tomatoes or fresh tomatoes
  • 1 small jar of spaghetti sauce or make your own sauce
  • 1-1 1/2 cup of shredded cheese of choice
  • 8 oz sliced mushrooms
  • 1 Tbsp minced garlic
  • oregano
  • basil
  • salt and pepper

Instructions

  • Brown ground chuck with Tbsp Worcestershire sauce, and drain.
  • Chop eggplant, onion, pepper, zuchinni, and yellow squash into small to medium size pieces. 
  • Put all in bowl with mushrooms. Add in beef, tomatoes, sauce, and ½ cup cheese. Add in spices as desired. 
  • Stir all together and put in casserole dish. Sprinkle remaining ½ cup cheese over top. Bake at 350 for about 45 minutes. 
  • Let sit for at least 30 minutes before serving.

Notes

For a vegetarian dish sub meat with a can of black beans that have been drained
Prep time 10- 15 minutes - The time required to cut vegetables and brown meat
Cooking Time 45 minutes
Yields 8-10 servings
