Eggplant Casserole
Vegetable Dishes
Ingredients
- 1 lb. ground chuck
- 1 TBSP. Worcestershire sauce
- 1 Eggplant
- 1 small onion
- 1 bell pepper of choice
- 1 medium zucchini
- 1 medium yellow squash
- 1 medium can of stewed tomatoes or fresh tomatoes
- 1 small jar of spaghetti sauce or make your own sauce
- 1-1 1/2 cup of shredded cheese of choice
- 8 oz sliced mushrooms
- 1 Tbsp minced garlic
- oregano
- basil
- salt and pepper
Instructions
- Brown ground chuck with Tbsp Worcestershire sauce, and drain.
- Chop eggplant, onion, pepper, zuchinni, and yellow squash into small to medium size pieces.
- Put all in bowl with mushrooms. Add in beef, tomatoes, sauce, and ½ cup cheese. Add in spices as desired.
- Stir all together and put in casserole dish. Sprinkle remaining ½ cup cheese over top. Bake at 350 for about 45 minutes.
- Let sit for at least 30 minutes before serving.
Notes
For a vegetarian dish sub meat with a can of black beans that have been drained
Prep time 10- 15 minutes - The time required to cut vegetables and brown meat
