Southwestern Chicken Quinoa

Ingredients
- 2 Tbsp. olive oil
- 2 chicken breasts
- 2 cloves garlic
- 1 jalapeño
- 1 cup quinoa
- 1 cup vegetable broth
- 1 15oz can of black beans
- 1 15oz can fire-roasted diced tomatoes
- 1 cup corn
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt to taste
- Pepper to taste
- 1 avocado
- juice of 1 lime
Instructions
- Heat olive oil in a large skilletover medium high heat. Dice chicken breasts and cook thoroughly. Add salt andpepper to taste. Add crushed garlic and a diced jalapeño pepper (leave thejalapeño seeds in for extra spice).
- Stir in quinoa, vegetable broth, beans, tomatoes, corn,chili powder and cumin; season with salt and pepper to taste.
- Cover and simmer until quinoa is cooked through, roughly 30 minutes. Stir in avocado, cilantro,and lime juice. Garnish with extra cilantro and enjoy!
